For five generations, the Henry family has been making tableware and bakeware in Marcigny, France. True to tradition all Emile Henry pieces are carefully crafted from Burgundy clay, found naturally in the region. The mineral-rich clay is combined with 100-percent natural ingredients to create a product unsurpassed for even heat distribution. Through the unique Ceradon process, each piece is fired with an extremely durable glaze that gives the finished product a naturally non-stick surface- which will not scratch from use or cleaning. A traditional dish with a simple shape, this is the basic oven dish that Emile Henry has been producing since 1850. For cooking gratins, meat or fish, it can be used for a multitude of recipes. I like this 10 1/2" Emile Henry, it is just the right size for roasted side-dishes for 2 to 4 people. However, the 8 1/2" ones are rather small. They clean up nicely and look nice on the table as well.

Once you get one without serious casting or glazing flaws, these are some of the best "baking dishes" I have worked with. The oval shape means that you don't have over-cooked corners and a cold middle. They clean up well and the variety of sizes means that your dish fits, rather than being spread too thin or overflowing.However, in trying to get a "set" we went through probably half a dozen exchanges, as well as looking through all the stock that a local retailer had before we could find four of the five pieces we wanted.
